Energy Bites 3 Ways

Hope you are having a nice one. Meanwhile where I live it is raining! People generally feel less energised when it rains – its as if when the sky turns groggy we do too. However, making some no-bake energy bites is a healthy and delicious way to regain some energy. And, I have 3 great recipes to share with you (one of which is nut-free!) so there is something to please everyone.

For anyone who is new to the concept of energy bites, they are exactly what they say on the tin – little nuggets of deliciousness which keep you energised throughout the day. They make a perfect healthy dessert or morning/after-school snack, and are great for on the go.

The first type of energy bites we are making are peanut butter energy bites. For anyone who loves this nutty spread these are a must try. And only 4 ingredients! Unless you add dark chocolate chips which I COMPLETELY recommend, however I didn’t have any at home 😦

The first step is to weigh out your ingredients into a bowl – peanut butter, oats, dessicated coconut, and honey.  Then, using your fingers (I find this the easiest way) ‘smush’ the ingredients together to form a sticky dough. Here’s a picture of the ‘smushing’ in action:

Your dough should look something like this:

You can add more peanut butter/coconut as necessary to reach the right consistency. Then, roll the dough into 3 balls and toss them in some dessicated coconut. That’s it! Delicious and healthy peanut butter energy bites in minutes.

The next type of energy balls we are making is a choco-nut variety. Of the three, this one is my favourite simply because it’s got NUTELLA in it. And anything with nutella in it is guaranteed to taste amazing.

The first step is to measure your 5 ingredients into a bowl: nutella (of course), chopped pistachios, coconut, rice krispies, and date nectar, which is a thick, sticky paste made 100% from dates. This helps to bind the mixture together to form a sticky dough.

Like with the peanut butter energy bites, you need to ‘smush’ the ingredients together with your fingers. Unlike the peanut butter energy bites, this recipe is very messy! If your mixture is not coming together, keep calm and add more date nectar.

Anyways, once your dough comes together, use your hands to squish the dough into 3 ball shapes. And presto!

The final type of energy bites are nut-free chocolate bites. And only 4 ingredients as well! Most importantly, these taste just like brownies, and who doesn’t love brownies?

Firstly, measure your ingredients into a bowl: date nectar, oats, coconut, and cocoa powder. Then, it’s ‘smush’ time!

Add more date nectar/coconut if needed. Next, press the mixture into 3 balls and roll them in cocoa powder.

And there you go! Creamy 4-ingredient no-bake peanut butter energy bites, crispy 5-ingredient no-bake Choco-nut energy bites, and delicious 4-ingredient no-bake nut-free chocolate energy bites ready in minutes. What a mouthful! (see what I did there?)

Peanut Butter Energy Bites

Makes: 3

Time: 5 minutes

You will need:

  • 2 tablespoons smooth Peanut Butter
  • 1 teaspoon honey (to taste)
  • 20 grams Porridge Oats
  • 10 grams Dessicated Coconut, plus extra for rolling

Method:

  1. Measure all ingredients into a bowl. Using your fingers mix them together to form a sticky dough.
  2. Roll the dough into 3 balls. Toss each ball in dessicated coconut and serve.
Can be stored in an airtight container at room temperature for a few days.

Choco-nut Energy Bites

Makes: 3

Time: 10 minutes

You will need:

  • 2 tablespoons nutella
  • 5 tablespoons Rice Krispies
  • 15 Pistachios
  • 10 grams Dessicated Coconut
  • 1 and 1/2 tablespoons Date Nectar

Method:

  1. Roughly chop the pistachios into small chunks using a straight-edged knife. Place them into a bowl along with the other ingredients.
  2. Using your fingers mix the ingredients to form a dough. Add more date nectar if needed to help bind the dough.
  3. Using your hands press the mixture into 3 balls and serve.
Can be stored in an airtight container at room temperature for a few days.

Nut-Free Chocolate Energy Bites

Makes: 3

Time: 5 minutes

You will need:

  • 2 tablespoons Date Nectar
  • 10 grams Dessicated Coconut
  • 20g Porridge Oats
  • 1 teaspoon cocoa powder, plus extra for rolling

Method:

  1. Measure all ingredients into a bowl. Using your fingers mix them to form a sticky dough.
  2. Using your hands press the mixture into 3 balls. Roll in cocoa powder and serve.
Can be stored in an airtight container at room temperature for a few days.
